Minimise Combination Oven Breakdowns

Keep your combination ovens running smoothly and reduce unexpected breakdowns with these essential maintenance tips from our expert team.

1. Cleaning

Always without fail use the recommended tablets / liquids and always use the correct amount as shown within the manufacturer's guidelines. Operators should run the self-cleaning program at least once a day. If you use your Combination Oven for Roasting only, the oven will need cleaning more often due to the fats etc. The Steam Cycle will help clean and flush the drain.

2. Water Treatment

We would suggest that the operator should check that the treatment unit is in date and record the information. Water Filters such as CTU's are replaced regularly. The Water treatment for these units is imperative for the smooth running of your Combination Oven. Scale build up will increase the downtime and breakdowns within these units.

3. Probes

Probes are really not looked after, we know how busy the kitchen gets, but please ensure the operator knows how to treat a probe. Always place it back in the holder when not in use to ensure these are not damaged and in some cases, please be careful not to damage probes when closing the oven door. We seem to replace more probes than anything else on a Combination Oven, due to misuse.

4. Seals

Always check the condition of the door and trolley seals. Once these door seals split and become damaged the unit needs to work harder. Replacing door seal regularly will save time and money in the long run. Internally there will be seals for lamps etc. These also need to be checked thoroughly to ascertain no water is reaching the lamps or any electrics.

5. Regular Maintenance

Alongside all of the above points, you should employ a regular maintenance plan for your Combination Oven units, not only for the safety of your employees, but keeping up with the manufacturers guidelines, keeping regular service records and increasing the lifecycle of the unit.
